Burritos

These are a delicious treat that are surprisingly cheap to make – the rice helps to keep it a budget dish. They’re great with just cheese, or even better filled with lettuce, sour cream and guacamole. I’ve written beef in the recipe but it doesn’t really matter what meat you use for these either – I used beef and pork mince because it’s so much cheaper than just beef.

Leftover mince should be fine to reheat for around three days if kept in the fridge, or around a month if frozen. It’s best not to reheat the rice though.

Tip: this dish can be made as mild or as spicy as you like. If you’re cooking for people with different tastes then try making a mild mince and add tabasco sauce or chilli flakes to individual portions.

Serves: six people.

Cost per person: £0.81 (price based on Tesco Value ingredients).

Ingredients:

  • 6 tortillas
  • 1 onion
  • 500g beef mince
  • 1 can (400g) chopped tomatoes
  • 1 large or 2 small peppers
  • 300g rice
  • 180g grated cheddar cheese, or similar
  • 1-2 tsps chilli powder
  • 1 tsp mixed herbs
  • Salt and pepper, to season
  • Vegetable oil, for frying

Method

1) Chop the onion and fry on a high heat with the chilli powder for around 5 minutes, until soft and golden.

2) Add the mince and cook for another 5 minutes, until brown.

3) Add the chopped tomatoes and season with the mixed herbs, salt and pepper. Simmer on a high heat for around 10 minutes, until the juices have mostly boiled off.

4) At the same time put the rice on to boil. When cooked drain, rinse well with boiling water and set aside.

5) Add the chopped pepper to the mince and cook for around 2 minutes, to ensure it stays crunchy.

6) Serve the rice, mince and grated cheese in a tortilla, and roll into a burrito shape.

Strawberry Surprise Cupcakes

I have a really sweet tooth so I thought these little cupcakes would be great. The strawberry jam gives a delicious addition to traditional fluffy sponge, and they’re so more-ish.

Tip: I’ve used strawberry jam as it’s my favourite, but pretty much any flavour of jam (although not marmalade!) would work well. I think blackcurrant or raspberry would be particularly good!

Makes: I made thirteen good sized cupcakes, but you could possibly get one more out of this recipe if you made them quite small.

Cost per cake: obviously this depends on how many cakes you make, but if you made thirteen cakes it would work out as £0.09 per cake (price based on Tesco Value ingredients).

Ingredients:

  • 150g butter
  • 150g caster sugar
  • 2 eggs
  • 1/2 tsp vanilla essence
  • 150g self raising flour
  • 75g strawberry jam

Method

1) Preheat the oven to 180C.

2) Cream together the butter and sugar, and then beat in the eggs and vanilla essence.

3) Sift the flour into the mixture gradually, and fold in with a large metal spoon.

4) Fill each of your cake cases around half full with mixture.

5) Add around a teaspoon of jam to each cake case, taking care that the jam does not reach the sides – if it does, it will all ooze out of the side of the cake.

6) Cover over the jam with a layer of mixture, ensuring it is all covered up.

7) Bake in the oven for around 12-15 minutes, until golden.

8) Try not to eat them all at once!

Egg Fried Rice

This is an extremely cheap and very easy recipe to make, and it’s great either as a dish on its own or as an accompanying dish to oriental food such as Chinese.

Leftovers should be fine to reheat for around three days if kept in the fridge, or this dish can also be eaten cold.

Tip: I’ve left the recipe vegetarian and very simple, but it would be great with some bacon if you wanted a more substantial meal – just chop it up and fry it with the mushrooms.

Serves: two people.

Cost per person: £0.42 (price based on Tesco Value ingredients).

Ingredients:

  • 2 eggs
  • 150g mushrooms
  • 200g frozen peas
  • 1 garlic clove
  • 200g rice
  • 3 tsps soy sauce
  • Vegetable oil, for frying

Method

1) Cook the rice for around twelve minutes, or according to the instructions on the packet. Drain and set aside.

2) Beat the eggs and fry for around 1 minute until set, then remove from the pan and slice into strips.

3) Chop the mushrooms and fry for around 3 minutes, until golden.

4) Add the peas and chopped garlic to the mushrooms and fry for 1 minute.

5) Add the rice to the pan and stir through, before adding the soy sauce.

6) Stir the chopped egg through the rice.

7) Serve immediately, with a little more soy sauce if you wish.

Raspberry and White Chocolate Cookies

I have a real thing at the moment for cookies that are a bit more interesting than basic milk chocolate chips, so I was really pleased with how these turned out. I really like the added flavour that using whole raspberries, as opposed to freeze dried raspberry pieces, gives.

Tip: I used frozen raspberries because they’re much cheaper than fresh, but you can use either and it will work exactly the same. However, fresh raspberries will release a lot more juice into the mixture so if you find it gets too runny just add a little more flour.

Makes: around fifteen large cookies, or maybe a few more if you make them a bit smaller.

Cost per cookie: again, this depends on how many cookies you make but if you made fifteen cookies it would work out as £0.14 per cookie (price based on Tesco Value ingredients).

Ingredients:

  • 350g unsifted plain flour
  • 1 tsp bicarbonate of soda
  • 250g butter
  • 250g caster sugar
  • 2 eggs
  • 100g white chocolate
  • 75g raspberries

Method

1) Preheat the oven to 180C.

2) Cream the butter and sugar together, and then beat in the eggs.

3) Mix together the flour and bicarbonate of soda, and add to the mixture.

4) Break the chocolate into small pieces, and stir it evenly through the mixture.

5) Chop the raspberries into pieces and add them to the mixture as well, trying not to release too much juice.

6) Spoon the dough onto a greased baking tray and cook in the oven for around 12-15 minutes, until golden.

Pancakes

Pancakes are great – cheap, easy, and you can fill them with pretty much anything. Everyone loves them, yet no one eats them all year apart from Pancake Day!

I ate mine with sliced banana, golden syrup and vanilla ice cream, but you could also have them with a savoury filling. Some great filling ideas are:

  • Blueberries and strawberries with whipped cream or mascarpone
  • Sliced banana with nutella and ice cream
  • Mushrooms, ham and cheese
  • Chicken and leeks in a creamy sauce
  • Bacon and brie
  • Blue cheese and leeks
  • Garlic mushrooms with cream cheese

Serves: six people.

Cost per person: £0.06 (price based on Tesco Value ingredients).

Ingredients:

  • 55g plain flour
  • Pinch of salt
  • 1 egg
  • 100ml milk, mixed with 40ml water
  • Vegetable oil, for frying

Method

1) Sift the flour with the salt into a large mixing bowl.

2) Break the egg into the flour, and whisk them together.

3) Whisk the milk into the flour and egg mixture.

4) Lubricate the pan with the oil then get it really hot, before turning it down to a medium heat. Spoon about 2tbsp of batter into the pan, spreading it around with a spatula. After around 30 seconds the underneath should be golden; flip it over and cook for just a few seconds on the other side.

5) Add your filling of choice and enjoy!

Classic Beef Burger

It’s been such gorgeous sunny weather lately that I just had to do a recipe for a good old-fashioned beef burger for all the barbeques going on at the moment! It’s a very simple recipe, and you can add your preference of tomato, cheese, ketchup etc to it however you want to.

Serves: four people.

Cost per person: £0.49 (price based on Tesco Value ingredients).

Ingredients:

  • 50g tomato puree
  • 1 egg
  • 1 onion
  • 400g beef mince
  • 20g breadcrumbs
  • 1 tsp mixed herbs
  • 1 tsp chilli powder/cayenne pepper
  • Salt and pepper, to season
  • Vegetable oil, for frying

Method

1) Whisk together the tomato puree and egg. Season and add the mixed herbs and chilli powder or cayenne pepper.

2) Finely chop the onion and mix this into the tomato puree and egg mixture, along with the mince and breadcrumbs.

3) Shape into patties (I used a burger press but your hands are fine if you don’t have one!) and either barbeque, or fry on a medium heat for around 3 minutes on each side, until cooked through – you can check by cutting into the burger with a knife if you aren’t sure if it’s done.

4) Put the burgers into a bun along with your favourite fillings and enjoy!

Breakfast Pizza

Not only good for breakfast but for any meal of the day, this is a really quick and tasty dish, and it serves one person – perfect for those nights when you only have yourself to cook for so you don’t know what to make as nearly every recipe serves two-four people!

Tip: I’ve made the recipe very basic, but if you have either to hand then some fresh basil and sliced tomatoes would taste great added to this.

Serves: one person.

Cost per person: £1.08 (price based on Tesco Value ingredients).

Ingredients:

  • One tortilla
  • One egg
  • Three rashers of bacon
  • 2 tbsps tomato puree
  • 25g grated cheese (cheddar or mozzarella)
  • 1 tsp mixed herbs
  • Salt and pepper, to season
  • Vegetable oil, for frying

Method

1) Fry the egg, until just set but not overcooked. Set aside.

2) Fry the bacon until cooked. Set aside.

3) Brown the tortilla in the frying pan, for about a minute on each side.

4) Whilst the second side of the tortilla is browning, spread it with the tomato puree. Sprinkle on the mixed herbs and season with salt and pepper to taste. Add the bacon and egg.

5) Sprinkle with the grated cheese and place under a hot grill until the cheese has melted.
